Quick and healthy food ideas

Quick, easy, and most importantly tasty...that's why Chef Paul Schunder from Central Market joined us in the studio.

Spinach, Orange and Avocado Salad with Chilitas

The Chilitas

2 tablespoons pepitas (pumpkin seeds)
2 tablespoons chopped nuts (almond, pecan, peanut or other)
1 tablespoon sesame seeds
1/2 teaspoon olive oil
1/2 teaspoon chili powder
1/4 teaspoon salt
Pinch of cayenne

Combine the seeds with the oil. Sprinkle in the spices, then roast on a large baking sheet at 325 degrees for 10 minutes. Cool, place in an air-tight container.

The Salad

2 teaspoons white wine vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried Mexican leaf oregano
2 1/2 tablespoons extra virgin olive oil
9 cups clean, dry baby flat leaf spinach
1/2 cup sliced white onion, soaked in ice water for 5 minutes, drained
3 radishes, cut into very thin matchsticks
1 ripe avocado, cubed
12 tortilla chips, broken up
2 oranges, peeled, cut into supremes
1/4 cup crumbled queso fresco

Combine the vinegar, mustard, salt and pepper, and oregano, then whisk in the oil. Toss with the spinach, onion, radish, avocado and tortilla chips. Divide onto 6 plates; top each with a few orange supremes, some queso fresco and a sprinkling of chilitas.Quick and healthy food ideas
